- Bring the water or milk to a boil with the sugar and keep it hot.
- Melt the ghee in a pan, roast the cashews and raisins golden in it, and remove.
- Roast the semolina in the same ghee over medium heat for 8–10 minutes, stirring constantly. It turns sand-colored and smells nutty - that is the whole flavor of the dish.
- Take the pan off the heat and carefully pour in the hot liquid in one go. It will spatter fiercely, hence off the heat.
- Return to the heat and stir until the liquid is absorbed and the mixture pulls away from the sides of the pan - 3–4 minutes.
- Fold in the cardamom, saffron and nuts. Cover and let rest for 5 minutes.
Tips
- Hot liquid onto hot semolina, always. Cold liquid causes lumps.
- The ratio of semolina to liquid is 1 : 4 by volume. Less liquid makes a firmer halwa, more makes a spoonable one.
- Vegan: coconut oil and oat milk. It turns out different, but good.
