๐ฑ Beginner๐
Breakfast๐ฅ Vegetarianโก 10 min
An omelette with onion, chili and coriander, sold every morning at every train station in India between two slices of toast. Five minutes, and it's leagues more interesting than the French version.
๐ฑ Beginner: Nothing here can go wrong. If you can boil pasta, you can cook this.

- Whisk the eggs with salt and the spices until evenly yellow.
- Stir in the onion, chili and coriander.
- Heat a pan to medium, add oil. Pour in the egg mixture and immediately turn the heat down a little.
- When the edge has set and the center is still slightly moist, flip once and finish for 30 seconds.
Tips
- The onion really needs to be finely diced, or it stays raw and crunches between your teeth.
- In India it goes onto buttered toast to eat by hand - as a sandwich it is a complete breakfast.
