Method

- Lightly salt the potato slices and sprinkle with 1 tsp Chaat Masala.
- Butter one side of every slice of bread, then spread chutney on top of the butter.
- Layer potato, cucumber, tomato, and onion on two of the slices. Sprinkle the remaining Chaat Masala over the top.
- Close the sandwiches and toast in a sandwich press or in a pan with a little butter under light pressure, 3–4 minutes per side, until golden brown.
- Cut on the diagonal and serve with the remaining chutney.
Tips
- Butter AND chutney, in that order: the butter is the barrier layer that keeps the bread from turning soggy from the chutney.
- Slice everything very thin. Thick slices slide out on the first bite.
- Make it vegan with plant-based margarine — everything else already is.
