Til Chikki
Sesame-jaggery brittle, three ingredients
🔥 Intermediate🍮 Dessert🌿 Vegan🕐 25 min
Toasted sesame in melted jaggery, rolled thin and broken into diamonds. In North India it's eaten in January for the harvest festival. It's here because melted sugar is the one ingredient that never gives you a second chance.
🔥 Intermediate: Several things happening at once, or a dough to manage. It clicks the second time.

Method

- Toast the sesame in a dry pan over medium heat for 4–5 minutes, until light golden brown and starting to pop. Set aside.
- Oil a baking tray and a rolling pin and have them ready. From here everything happens very fast.
- Heat the oil in a heavy pot, add the jaggery and melt it over low heat, stirring.
- Keep cooking until a drop in cold water hardens instantly and cracks when bitten — not sticky. This takes 4–6 minutes after melting.
- Take off the heat immediately, stir in the sesame and cardamom, and tip the mixture onto the tray.
- Roll out thin with the oiled rolling pin while still warm and cut into diamonds. Let cool, then break apart.
Tips
- The water test is the only reliable one. Too early and the chikki stays chewy; too late and it tastes burnt.
- Get everything ready before the jaggery hits the stove. After that you have about 30 seconds to roll it out.
- Stored airtight, it keeps for a month.
