Hyderabadi Chicken Biryani
Rice and meat, finished together under steam
👨🍳 Pro🍛 Main Course🍗 With Meat🕓 300 min
Not a rice dish with meat in it, but two half-cooked things layered together and sealed shut to finish cooking on their own. The lid stays closed — and that’s the part that takes nerve, because you can’t check whether it’s working until the very end.
👨🍳 Pro: Fermenting, deep-frying or layering. Needs time, patience and a quiet afternoon.

Method

- Fry the onion rings slowly in oil until golden brown and crisp — 15–20 minutes over medium heat. Drain on paper towels. This is the birista, and it is the flavor of the dish.
- Mix the chicken with the yogurt, ginger-garlic paste, chili powder, turmeric, garam masala, salt, lime juice, half the herbs and half the birista. Marinate cold for 3–4 hours, overnight if you can.
- Soak the rice for 30 minutes. Bring plenty of water to a boil with the whole spices and a generous amount of salt — it should taste like seawater.
- Cook the rice in it for only 4–5 minutes, until it’s about 70% done: a grain pressed between your fingers should still crush with a hard core at the center. Drain immediately.
- Spread the marinade with the chicken flat in a wide, heavy pot. Layer the rice loosely on top.
- Spread the saffron milk, melted ghee, remaining herbs and remaining birista over the top.
- Seal the lid tightly — with a dough seal, or foil under the lid. 10 minutes on high heat, then set the pot on a flame tamer or a heavy pan and cook 35–40 minutes on the lowest possible heat.
- Let it rest, sealed, for 15 minutes. Then lift the rice out from the side with a flat spoon — do not stir.
Tips
- The point of no return is the 70%-cooked rice. Cook it past that, and the biryani turns to mush — and you won’t know it until an hour later, under the lid.
- The lid stays shut. Every peek lets out the steam that’s cooking the whole dish.
- A wide, heavy pot matters more than any single ingredient. In a tall, thin pot the bottom layer burns before the top layer is done.
- Fry your own birista. Store-bought fried onions are sweet and battered — that is not the same thing.
