Badam Milk
Warm almond milk with saffron
🔥 Intermediate🥤 Drink🥛 Vegetarian🕑 35 min
Milk with a paste of soaked almonds, cardamom and saffron. In India it's the bedtime drink, and in winter it's what mulled wine is here.
🔥 Intermediate: Several things happening at once, or a dough to manage. It clicks the second time.

Method

- Soak the almonds in boiling water for 15 minutes, then peel off the skins — they slide off between your fingers on their own.
- Blend with 4 tbsp of the milk into a fine paste. Really fine: a grainy paste stays grainy.
- Bring the rest of the milk to a boil with the saffron, then turn the heat down low.
- Stir in the almond paste and simmer for 10 minutes, stirring occasionally. The milk visibly thickens.
- Stir in the sugar, cardamom and nutmeg, and let it steep for 2 more minutes.
Tips
- Soak the saffron in a spoonful of warm milk for 5 minutes beforehand — this way it gives up its color and aroma instead of just floating on top.
- It's just as good served cold, and better in summer.
