Step-by-step method (absorption)
1. Rinse 1 cup basmati in cold water until the water runs clear.
2. Soak for 20-30 minutes, then drain.
3. Add the rice to a pot with 1½ cups water, a teaspoon of oil or ghee, and salt. Bring to a boil.
4. Cover, reduce to the lowest heat, and cook undisturbed for 12-15 minutes until the water is absorbed.
5. Turn off the heat and rest, covered, for 5 minutes.
